Dry fruit laddu or dink laddu



Dry fruits Laddu are made specially in winter as a warm food . All Ingredients used in this laddu have many health benefits like almonds are good for brain ,Edible gum is good for bones, Dried dates have calcium and iron ,ghee is rich in fats.Fenugreek seeds and fennel seeds have health benefits  like aid in digestion ,helps treating heartburn and boosts milk supply for lactating mothers.So these laddus are given to pregnent and lactating mother as nutritious food in confinement diet. 
Nutritious dry fruits help to boost immunity and very healthy snacks option for growing kids. Its hard to include all variety of dry fruits daily in diet so this laddu is great way to have all dry fruits . Additionally these laddu are rich in fats and fiber and very high calories food.
Preparation of laddus take lots of time . Every ingredient used in this laddu has to be cleaned first using dry cotton cloth and then powdered using grinder or special grinding machines used for making powder are also available in many places.
Mortar pastel is used for making pieces of dry fruits like dink(edible gum), dried dates, godambi,
coconut  as these ingredients are very hard to be grinded in grinder directly.
Quantity /proportion of dry fruits used in these laddu can be varied as per requirement.Also sugar is optional or use it in required quantity. Instead of using sugar use more dried dates as a sweetener. Using home made ghee gives it aroma and unique taste of ghee. Raisins ,walnut like dry fruits cal also be added in this laddu.

Cooking time:60 min
Ingredients:
  • Dry coconut 1 cup,
  • Dried dates 2 cups,
  • Godambi (marking nut)1 cup,
  • Fennel seeds 1 tb spoon ,
  • Fenugreek seeds 1 tb spoon,
  • Sugar 2 cup,
  • Ghee 4 cups or if required more,
  • Cashew 1 cup,
  • Almonds 2 cups cup,
  • Dink (Edible gum) 1/2 cup
  • Cardamoms powder 1 tea spoon,
  • Nutmeg powder 1 tea spoon.
Directions to cook:
  1. For making dry fruits powder :
  2. Clean all dry fruits using clean cotton cloth.
  3. For grinding dry dates it has to be deseeded first and then broken in small pieces for making powder. Remove seeds from Dried dates and break into pieces using mortar and pestel. Keep aside.
  4. Coconut also cut into pieces and then grind using grinder.Cut dry coconut in small pieces. Keep aside.
  5. Using mortar pastel break dink (edible gum) in pieces.Keep aside.
  6. Grind coconut pieces in grinder to get powder and keep aside
  7. Grind fenugreek seeds, fennel seeds in grinder separately keep aside.
  8. Grind cashews in grinder to get powder and keep aside
  9. Similarly grind almond ,dried dates ,dink (edible gum) ,sugar in grinder to get powder and keep aside.
  10. Mix all dry fruits ,sugar powder in big vessel.
  11. Heat kadhai and add ghee in it.
  12. Pour melted hot ghee in dry fruits powder and mix well using big spoon as ghee is very hot .
  13. Form laddus immediately.these laddu have very good shelf life .
