curry recipe -or how to make egg curry
Egg
curry is made using  simple tomato, onion  gravy and eggs. Eggs need
to be boiled and then boiled eggs are deep fried or shallow fried for
adding in curry.Frying  eggs makes it more delicious but if you want
this step can be avoided also.Eggs are very healthy using boiled eggs
in different recipes is  good option for providing all round
nutrition to kids. Boiled eggs can be used in many ways in egg
biryani ,egg kurma,egg masala.
Its
easy to make  and nutritious curry . There are many variations of egg
curry ,here I have posted  simple curry without any garam masala /
spices.While making special  egg  curry adding  freshly  ground
spices / garam  masala  makes it  spicy and tasty.

Ingredients:
- Eggs 4
 - Tomato chopped 3 big size
 - Onions chopped 2
 - Green chili chopped 2
 - Coriander leaves chopped small bunch
 - Ginger small piece
 - Garlic cloves 3
 - Oil 1 tb Spoon
 - Cream 1 tb spoon
 - Salt as per taste
 - Turmeric powder 1/4 tea spoon
 - Coriander powder 1/2 tea spoon
 - Water
 - Cumin seeds powder 1 tea spoon
 
Directions
to Cook :
- For making eggs:Boil eggs in hot water for about 14 to 15 minutes.Let it cool down.
 - Break eggs cover and cut boiled eggs in two or four pieces.
 - Shallow fry eggs pieces with some oil in a pan.Eggs can be deep fried also.
 - For making gravy of egg curry:Chop onions ,tomatoes ,chili,garlic, ginger in small pieces.
 - Grind onions, chili ,garlic, ginger in grinder with some water .Keep it aside.
 - Grind tomatoes ,coriander leaves with water to get fine puree.Keep it aside.
 - Heat kadhai and add oil in it.
 - Add cumin seeds and mustard ,asafoetida in oil to make tampering.
 - As mustard splutter add onion puree in it. Saute for 3 to 4 minutes.
 - Pour tomato puree in kadhai and saute for 3 to 4 minutes.Keep on stirring veggie puree until oil separates from it.
 - Add fried eggs pieces in kadhai and mix well.
 - Add cumin powder,turmeric,salt,coriander powder in it.
 - Add enough water (As per required consistency) for cooking egg curry .
 - Cook for 10 to 12 minutes .
 - Garnish with fresh cream and serve eggs curry with roti or paratha or naan or rice.
