Dry fruit barfi



Eating different types  of dry fruits is  good for health as every dry fruit has its own benefits.This dry fruits  desert is  different from traditional sweets with lots of sugar.This sweet it made up of dry fruits only and its without sugar. Dry fruits barfi is very nutritious desert/sweet and good option for candies ,chocolates,biscuits like snacks for kids.
It takes very less time to make this barfi and it had good shelf life of 1 to 2 weeks.Sweetness can be adjusted by  increasing or decreasing quantity  of dates and figs in it. Adjust quantity of ghee also as per requirement .For less calories I have added less ghee in following recipe.



Cooking time:1 hour
Ingredients :
  • Figs (Anjeer ) 100 gm
  • Dates 100 gm
  • Cashew nuts 150 gm
  • Almonds 100 gm
  • Pistachios 50 gm
  • Cardamom powder 1/2 tea spoon
  • Raisins 50 gm
  • Dry coconut grated 50 gm
  • Ghee 100 gm
Directions to cook:
  1. Heat heavy bottom pan.Pour half tea spoon of ghee in it.
  2. Add cashew nuts in it and roast them for 3 to 4 minutes . keep it aside.
  3. Roast Almonds for 4 to 5 minutes similar way with ghee and keep aside.
  4. Cut dates in smallest possible pieces and roast for 5 to 6 minutes with ghee.
  5. Cut figs in smallest possible pieces and add in pan.
  6. Saute all figs and dates together for 3 to 4 minutes.
  7. Add grated coconut in pan.
  8. Run cashew and almond in grinder to get coarse mixture.
  9. Add roasted cashews and almonds mixture in pan and roast for 2 to 3 minutes.
  10. Mix all ingredients properly.
  11. Switch off gas and let mixture cool for few minutes.Take small spoon or mould to form mithai and apply ghee to it.
  12. Put warm dry fruit mixture in spoon and press it tightly to form desired shapes of mithai /barfi I used this plastic spoon to form above shown shape.
  13. Keep formed barfi in refrigerator for  2 hours.As it will set in 2 hours and after that can be served . Store it i n dry and air tight container.
