How to make kadhai baby corn curry / Capsicum baby corn

Kadhai baby corn curry is combination of capsicum and fresh baby corns cooked in onion and tomato gravy with some spices. This is perfect accompaniment for roti /paratha/naan. Whenever i have guests at home i cook paneer curries as special dishes.But if in case i don't have paneer /cottage cheese  at home then i go for baby corn curries and believe me they are relished by guests. I have avoided any masala or garam masala in this kadhai baby corn curry as its cooked for kids. ,but while making special ,spicy curry using garam  masala becomes essential.
My kids like Baby corn. Baby corn is loved by kids because of its small size and crunchiness.I include  baby corn in many vegetable curries. Please check another interesting  Capsicum baby corn curry on the blog.

Ingredients:
  • Baby corn washed and chopped 1 cup
  • Tomato chopped 2
  • Onions chopped 1
  • Capsicum chopped 2
  • Coriander leaves chopped small bunch
  • Ginger small piece crushed
  • Garlic cloves 3 crushed
  • Cashew 1 tb spoon
  • Salt as per taste
  • Turmeric powder 1/5 tea spoon
  • Chili powder 1/2 tea spoon
  • Coriander powder 1/4 tea spoon
  • Cumin seeds powder 1 tea spoon
  • Oil 2 tb Spoon
  • Water 2 cup
Directions to Cook :
1. Heat kadhai and add oil in it.
2. Add cumin seeds and mustard in oil to make tempering.
3. Add finely chopped onions in kadhai and saute for 2-3 minutes.
4. Grind cashew nuts ,ginger ,garlic ,coriander leaves and some onions with water to get fine paste.Keep it aside.
5. Add chopped tomatoes to kadhai and saute onions and tomatoes for 2 more minutes.
6. Add cashews paste in kadhai and mix well.
7. Keep on stirring all veggies until oil separates from it.
8. Add cumin powder,turmeric,salt,coriander powder , chili powder, salt in kadhai while stirring the mixture.
9. Add chopped baby corn and capsicum pieces in kadhai and mix well.
10. Add water as per required consistency for cooking baby corn and capsicum curry.
11. Cook kadahi baby corn curry for 10 to 12 minutes and switch off gas when vegetables are tender enough.
12.Garnish kadhai baby corn with coriander leaves and serve with roti /chapathi.
