How to make lemon rice
Lemon rice is most popular dish from south india. Its cooked on almost all festivals as prashadam /naivadyam for offering to God across south india.Tangy taste of lemons make this rice different in taste. Peanuts and lentils are used in tampering while making this rice .I add more cashews and peanuts while making this rice as my kids like lemon rice with more nuts.
This rice is mostly served with coconut chutaney and rice papads.Lemon rice can be made using freshly cooked rice or leftover rice also. It taste well and more aromatic when cooked using freshly cooked rice.


Cooking time :20 min
Ingredients:
  • Rice 2 cups
  • Green chili 4 finely chopped
  • Peanuts 1 table Spoon
  • Urad dal /black gram  1 tea Spoon
  • Chana dal / bengal gram 1 tea spoon,
  • Curry leaves 8-9
  • Lemons 2
  • Turmeric powder 1/2 tea spoon
  • Oil 2 tb spoon
  • Salt as per taste
  • Water
Directions To Cook:

1.Cook 2 cup rice with 4 cups water and salt in open vessel.Add 4-5 drops of oil in it while cooking.By cooking rice in this way makes it non sticky.
2.Remove rice from flame before it gets completely cooked and spread it in one plate for cooling.
3.Squeeze lemons in bowl and remove seeds from it. Keep squeezed lemon juice aside.
4.Roast urad dal with some oil in kadhai.Keep it aside.
5.Roast chana dal ,cashews and peanuts separately with some oil similarly and keep them aside.
6.Add oil in kadhai.Add cumin and mustard seeds , pinch of asafoetida in it for making tempering.
7.Add finely chopped green chili and curry leaves and saute for 2 minutes.
8.Add roasted dals/lentils and peanuts in kadhai and saute for a minute.
9.Add 1/4 tea spoon of turmeric powder in kadhai.
10.Add lemon juice and cooked rice in kadhai and saute for 3-4 minutes adjust salt as per taste as cooked rice has salt in it.
11. Switch off gas and keep lemon rice covered for few minutes before serving.
