Vegetable manchurian

Its very popular chinese starter recipe and as it has loads of vegetables in it so  ideal for kids. Proportion of vegetables can be changed as per choice. Also an extra choice of veggie can also be added in it in small quantity for increasing nutrition value while making it for kids . I haven't used ajinomoto in it for flavor enhancing.
Restaurent veg manchurians have falvour enhancer in it for good taste. But home made manchurians also tastes great.Just important tip while making manchurians  squeeze out juice from vegetables as it will make batter runny. I have used maida (All purpose flour) along with corn flour for making balls as maida binds the balls very well .Manchurian balls can be made using only corn flour as well and it tastes well using only corn flour.

Cooking time: 60 minutes
Ingredients :
  • Carrots grated 1 cup
  • Cabbage 1 cup
  • Spring Onions chopped 1/2 cup
  • Capsicum grated 1 cup
  • corn flour 1/2 cup
  • Maida (All purpose flour) 2 tb spoon
  • Pepper powdered 5 -6
  • Soya sauce 3 tb Spoon
  • Chili 4 finely chopped
  • Garlic cloves 6 grated
  • Giner 1 inch piece grated
  • Salt as per taste
  • Oil for deep frying
  • Water
Directions to Cook:
  1. For making balls :
    Squeeze out juice from vegetables. As fresh vegetables have more juice . Use this juice if required while making balls and use for making sauce for manchurian  .Keep it aside.
  2. Mix all grated vegetables,onions in one big bowl and add corn flour , maida salt and pepper powder. Make balls of preferred size and deep fry these balls in oil on low heat. Keep it aside.
  3. For making Sauce:
    Heat oil in kadhai .fry grated ginger ,garlic ,chili , capsicum ,spring onion greens (grated 1 tea spoon) in oil.
  4. Pour squeezed out vegetable juice of grated vegetables in sauce .
  5. Mix 1 tea spoon corn flour with water to make a paste. Pour this corn flour paste in sauce .
  6. Add salt ,pepper powder ,soya  sauce in sauce for manchurian  and cook for 3 to 4 minutes.
  7. Add  fried  manchurian balls in sauce and switch off gas.
  8. Garnish with chopped spring onions and serve vegetable manchurian hot as a starter or with any choice of side dish.
