to make chola or punjabi chole
Chola
/kabuli chana is very popular delicacy in north india and generally
served with bhatura (A type of roti / bread made up from all purpose flour)
roti or rice. It goes well with any accompanying dish with it. Chola
is used in making , kebabs , pulao ,salads also. Its used in chats
which are extremely famous and chatpata street foods in india.
As
chola made from kabuli chana /white chana which is protein rich
food. So this chana makes super food for growing children ,use
it as a ingredient in any favorite dish like chole pulao ,
chole kebabs or chats , for your kids and enjoy growing with them.
I
generally cook chola for my daughters lunchbox which i pack with
poori. Posting here simple and delicious punjabi chole
recipe which is made by cooking chickpeas along with tomato , onion
gravy and selected spices.Spice used for making chola is mixture of
few spices like cinnamon,bay leaf,black pepper ,cumin.
I have used
store brought chola masala for making this recipe.

Ingredients:
Kabuli
chana /white chana /chickpeas 2 cup
Tomato
chopped 2
Onions
chopped 1
Green
chili chopped 4
Coriander
leaves chopped small bunch
Ginger
small piece
Garlic
cloves 3
Oil
1 tb Spoon,
Turmeric
powder 1/4 tea spoon
Chana
masala 1 tea spoon
Kasuri
methi (Dried fenugreek ) 1 tea spoon
Coriander
powder 1/4 tea spoon
Cumin seeds powder 1 tea spoon
Salt
as per taste
Water
Directions
to Cook :
1.Soak
chickpeas in water overnight or for 8-9 hours.
2.Make
sure to add more water in soaking vessel as chickpeas gets increased
in size after soaking with water.
3.Pressure
cook chickpeas with water and salt for 4-5 whistles in
pressure cooker.
4.For
making gravy of Chola:
Finely
chop onions ,tomatoes ,chili, coriander . Make a paste of garlic,
ginger. Keep it aside
5.Heat
kadhai and add oil in it.
6.Add
cumin seeds and mustard ,asafoetida in oil .
7.As
mustard splutter add onion in it. Saute for 3 a minute.
8.Add
green chili ,curry leaves and saute for a minute.
9.Add
tomatoes while stirring veggies.
10.Cook
it until oil separates from veggies.
11.Add
boiled chola in kadhai and mix well.
12.Add
cumin powder,turmeric,coriander powder in it.
13.Sprinkle
crushed kasuri meth on chola. Add salt as per requirement as already
while boiling Chickpeas salt has been added in it.
14.Add
enough water (As per required consistency) for cooking Chola.
15.Cook
for 10 to 12 minutes on low flame.
15.Serve
hot and spicy chola with Bhatura ,paratha or rice.
