Tomato rice
Tomato
rice is south indian rice dish . This rice is made using fresh ,
ripen tomatoes and selected spices which makes it tangy and spicy
in taste. Spices used make tomato rice aromatic and tomatoes give
it nutritious touch. Its not to be missed one dish meal as well.
Just
little preparation can make tomato rice ready. This rice is served
with onion raita/ any choice of raita or simply with papad and
pickle.

Ingredients:
- Rice 2 cup
- Green chili 1
- Tomatoes 4 big
- Onion 1
- Coriander leaves small bunch finely chopped
- Black pepper powder 1/4 tea spoon
- Cinnamon 1/2 inch stick
- Cardamom 2
- Cloves 2
- Chili powder 1/4 tea spoon
- Ginger paste /grated 1/2 te spoon
- Garlic paste /grated 1/2 tea spoon
- Curry leaves 5-6
- Mustard seeds 5
- Cumin seeds 5
- Fenugreek seeds 5 to 6
- Turmeric powder 1/4 tea spoon
- Oil 2 tb spoon
- Salt as per taste
- Water
Directions
To Cook:
- Wash rice with water and keep it aside.
- Pour oil in pressure cooker and add mustard seeds ,cumin seeds and fenugreek seeds.
- After crackling seeds add clove ,cardamom,cinnamon,and saute all spices for a minute in oil.
- Add chopped onions, green chili in oil and saute till onions gets translucent.
- Add curry leaves ,ginger and garlic pastes or grated and saute for a minute
- Add tomatoes while stirring.
- When tomatoes become mushy and start leaving oil add washed rice in it.
- Stir rice well to mix all ingredients.
- Add salt, turmeric powder ,chili powder ,cumin powder ,water and mix well.
- Cover with pressure cooker lid and cook rice for 2 -3 whistles .
- Switch off gas and let it cool for 10 more minutes before opening lid.
- Tomato rice is ready .Serve with papad and raita of choice.
