Puran poli is very delicious type of roti and its made more across western part of india .We make puran poli on almost all festivals as a offering to God. It needs much time and efforts to make perfect melt in mouth sweet roti.
Stuffing used in this puran poli is made using chana dal/ Bengal gram mainly.But other lentils like toor daal /moong daal also are used for making stuffing of puran poli. Jagery can be used instead of sugar. Cardamom ,fennel seeds and nutmeg powder is used to sprinkle while making puran to make it more tasty. While cooking puran it needs to be stirred continuesly to avoid burning.
This special roti making is tricky as cover and stuffing used should blend perfectly with each other to make perfect rotis. For making soft puran poli keep proper amount of stuffing in soft ball of dough. If kneaded dough for roti is not soft then stuffing may come out of roti which wont taste good.
Cooking Time :60 min
Ingredients:

Atta /wheat flour 4 cups
·
Chala daal 2 cups
·
Sugar / jagery 2 cups
·
Ghee 1/2 cup
·
Cardamom powder 1/4 tea spoon
·
Nutmeg powder ¼ tea spoon
·
Fennel seeds powder 1 tea spoon
·
Water
·
Salt as per taste
Directions
to Cook :
- Knead hard dough of wheat flour with little water and keep aside covered with wet cloth for at least 1 hour.
- For making puran / Stuffing :
- For testing puran is cooked or not keep flat spatula standing in kadhai .If it stands in puran without falling then consider it as cooked.
- For making puran poli :
- Add some water in kneaded dough and knead it again for making it more soft .This dough should be more softer than normal chapati/phulaka dough.
- Take small ball of kneaded dough and make small roti of it.
Place same size ball of puran /stuffings on it and seal it using dough properly.
With rolling pin roll rotis by applying very less pressure.else stuffing may come out. - Roast puran poli on non stick pan and apply ghee on both sides while roasting.
- Serve puran poli hot with ghee or any favorite accompaniment.
- Tips: Add 1 tb spoon og ghee while roasting puran to make it more soft and tasty.Also it wont stick to roti cover.
- Tips :Roast puran poli on low flame to cook it properly.
- Tips: Use sugar less than chana daal if you want less sweet puran poli
