How to make Amrakhand or mango saffron flavored yoghurt
Amrakhand is type of shrikhand(Dessert) and made using mangoes and curd. It's ideal dessert in this hot summer and quick to make as well. Amrakhand made using easily available ingredients and most favorite mangoes.As Its season of mangoes different type of mangoes can be used for making unique flavored amrakhand.I like amrakhand using Alphanso mangoes most, but its tastes delicious using other types of mangoes as well.
Other than mangoes it needs hung curd and for making perfect hung curd 6-7 hours time is necessary. Hung curd is very thick curd and for making it Muslin cloth /cotton cloth is used.I used 1 litre of curd to get 2 cups of thick/hung curd.
Enjoy this relishing mango dessert to beat the heat of hot summer.

Ingredients:
- Curd 1 litre
- Sugar 1 cups
- Mango pulp 1 cup
- Cardamom powder to sprinkle
- Saffron 4-5 strands
Directions
to cook:
1.For
making hung curd :
Spread
muslin cloth and pour curd on it. Take all corners of cloth
together and tie them to make potali.
2.Hang
this potali for 6-7 hours to get perfect hung curd for making Amrakhand.After 6-7 hours all the water will be removed from curd and cloth will have thick curd.
3.For
making Amrakhand:
Blend
hung curd ,sugar, mango pulp ,saffron strands and cardamom powder in blender till it gets smooth.
4.Garnish Amrakhand with chopped dry fruits and serve chilled.
