Vegetable
Pulao is spicy rice dish cooked with vegetables and spices . Its
most cooked rice dish for parties , feasts and functions. Its
perfect one pot meal as well, can be served with only any curd
raita.
Vegetable
Pulao is very simple and easy to cook dish. It can be cooked in
pressure cooker or open vessel. Pulao made in pressure cooker
which is faster version of pulao and other is made in restaurant
style. Restaurant style pulao takes a bit more time but this is more
presentable recipe.
Its
semi cooked in open vessel and mixed with fried vegetables of
choice and cooked again
It looks awesome and prefect feed for eyes as every grain of rice is separate by cooking in this way.Any choice of vegetables can be added in vegetable pulao to make it nutrition packed rice.Whole spices are used to make pulao full of flavors.

Ingredients:
Basmati
rice 2 cups
Paneer
cubes 1/2 cups(optional)
Onions
thinly chopped into slices 2
Carrots
1 chopped
Beans
5 chopped
Tomato
1 chopped
Green
chili chopped 4
Lemon
juice 1 tea spoon
Coriander
leaves chopped
Ginger
small piece
Garlic
cloves 4
Ghee
2 tb Spoon
Salt
as per taste
Bay
leaf 2
Cardamom
2
Cloves
2
Cinnamon
stick 1 inch piece
Stone
flowers
Cashews
1 tb spoon
Water
4 cup
Cumin
seeds 1 tea spoon
Directions
to Cook :
1. Clean
and drain rice .Soak basamati rice in water for 25 minutes.
2. Heat
ghee to pressure cooker.Add cumin seeds and after they crackle add
all dry spices in ghee.Saute till spice fragrance comes from it.
3. Add onions in it and saute till
onions get golden brown.
4.Add paneer cubes and saute for a minute.
5. Grind
ginger , garlic ,chili ,coriander with some water in grinder to get
paste.Add this padte in pressure cooker.
6. Add
all chopped vegetables of choice(any other vegetables like cauli
flower ,mutter can be added in pulao for more nutrition) in cooker
and saute for 3-4 minutes on low flame.
7. Drain
water and add soaked basmati rice in pressure cooker and saute
mixture for 1 minute.
8. Add
water double the quantity of rice in cooker for cooking pulao.
9. Add
salt as per taste , lime juice and mix well everything.
10. Close cooker lid and cook
vegetable pulao for 2-3 whistles ot till it cooked on low flame.Vegetable pulao is ready and serve with any choice of raita.
