 How to make vegetable fried rice
Vegetable fried rice is one pot meal and can be made with leftover rice. When there is leftover rice and no one wants to eat stale rice this is very good option to make .It's good option as a one pot meal or breakfast recipe. 
Add  any  choice  of  vegetables  like onions,  Carrots  ,tomatoes , french beans , fresh peas to make rice fully packed with vegetables. Make sure vegetables get cooked before adding rice in it. For spices section cumin and coriander powder can be accompanied with any garam masala. Nuts like peanuts and cashew nuts make vegetable fried rice nutty in taste too.
It can be made using leftover or freshly cooked rice also.Definitely tastes better when made with freshly cooked rice.

Cooking Time :15 min
  • Cooked rice 2 cups
  • Onions thinly chopped into slices 1
  • Carrots ,beans finely chopped + mutter 1/2 cup
  • Green chili chopped 4
  • Ginger small piece
  • Garlic cloves 4
  • Oil 2 tb Spoon
  • Salt as per taste
  • Turmeric powder 1/4 tea spoon
  • Garam masala powder 1/4 tea spoon
  • Coriander powder 1/4 tea spoon
  • Cumin seeds powder 1 tea spoon
Directions to Cook :

1. Heat kadhai and add cumin and mustard in it.
2. Add chopped onions and saute for a minute .
3. Add chopped veggies in kadhai and saute for 2-3 minutes.
4.Add crushed ginger and garlic paste in veggies and mix well.
5. Add chili powder, cumin and coriander powder ,turmeric powder in vegetables and saute.
6. Add cooked /leftover rice and salt in kadhai and mix well.Sprinkle water if necessary.
7. Cook vegetable fried rice for 7-8 minutes and serve with curd or any choice of raita.
