Bhelpuri
Bhelpuri
is one of the very famous street snacks in india. It is type of
chat and quick to make.Bhel means mixing in Hindi ,so its mixing
with puri.Puri used in bhelpuri is specially made for making
chats.Chats are very tempting and must have street snacks.Chats are
made and served in almost all parts of india.
For
making bhelpuri there are many different recipes followed. And there
is no specific set of ingredients or proportion as well. By mixing
chat and farsan ingredients tasty bhelpuri can be made. It dosen't
required direct cooking but ingredients used in bhelpuri need to be
cooked separately. Like puri used in bhelpuri can be made or brought
from market as its available ready made.If you want to use ragada
(White chana cooked with salt and selected spices) It has to be
cooked. Sev (Savory cracker made from chickpeas flour) can be made at
home or is available at stores as well.
Whatever
might be other ingredients two things are mandatory for making
bhelpuri and that are green(Spicy) chutaney and sweet (date +tamrind
or jaggery +tamrind ) chutaey.
Tomato,onions,green
chilies,grated carrots ,grated cucumber also can be used to mix in
bhelpuri and making it extra nutritious.
I have
used all easily available at home ingredients for following bhelpuri
recipe.Though these ingredients keep on changing as per availability
every time i make this tangy, sour and sweet snacks.
Cooking
time :20 min
Ingredients:
- Puffed rice /murmura 4 cup,
- Shev 1 cup,
- Onion finely chopped 1/2 cup,
- Black salt 1 tea spoon ,
- Cumin powder 1/2 tea Spoon,
- Sweet tamarind /jagery chutany 2 tb spoon,
- Green chili/mint chutany 2 tb spoon,
- Chat puri /Papadi 1/2 cup ,
- Water,
- Chat masala 1 tea Spoon,
- Coriander leaves finely chopped small bunch,
- Tomatoes finely chopped 1/2 cup
Directions
To Cook:
1.
For making green chutaney :
Grind
green chilies, coriander leaves , mint leaves , salt ,cumin powder
with some water together to make green chutaney .
2.
For making sweet and tangy tamerind chutaney :
Clean
and soak tamrind in water for an hour. Make pulp of tamrind. Grind
tamarind pulp,salt, jaggery ,cumin powder with some water .
Boil
this mixture on low flame for about 15 to 20 minutes .Tamarind
chutaney is ready.
3.For
making bhelpuri :
Take
big bowl and mix puffed rice ,crushed chat papadi ,onions,tomatoes,
shev in it.
4.
Add tamrind chutaney ,green chutaney in mixture .Mix all ingredients
well .
5.
Sprinkle black salt, chat masala on bhelpuri ,shev, coriander leaves
on bhelpuri.
6.
Garnish with chopped onions and coriander and serve tangy ,sweet
bhelpuri immediately.
