Eating
green vegetables is very good for health.When i have bunch of green
vegetables in refrigerator came up with making full of greens Methi
palak paneer. Slightly bitter taste of fenugreek leaves makes this
paneer curry more tasty.
Paneer is favorite of my kids and so I add as much as vegetables in any paneer curry recipe.Along with favorite paneer kids eat other vitamin rich vegetables and that too without complain. This methi palak paneer is one such curry. Enjoy making this methi palak paneer and serve with roti/rice/naan.

Ingredients:
- Paneer cubes 1 cup
- Methi leaves 1 cup
- Spinach leaves 1 cup
- Tomato chopped 1 big size
- Onions chopped 1
- Green chili chopped 2
- Coriander leaves chopped
- Ginger small piece
- Garlic cloves 5
- Oil 1 tb Spoon,
- Salt as per taste
- Turmeric powder 1/4 tea spoon
- Mustard seeds 9-10
- cumin seeds 9-10
- Coriander powder 1/4 tea spoon
- Water 2 cup
- Cumin seeds powder 1 tea spoon
Directions
to Cook :
1.
Boil water in a pan and add methi leaves and spinach leaves in it .
2.
Let green vegetables remain in water for some time. Drain water and
keep it aside.
3.Puree
boiled methi and palak leaves with some water to get vegetables
puree.
4.
Shallow fry /deep fry paneer cubes with some oil in a pan. Keep it
aside.
5.
For making gravy of Methi palak paneer:
Chop
onions ,tomatoes ,chili,garlic, ginger in small pieces.Keep it aside.

Grind onions, chili ,garlic, ginger in grinder with some water .Keep
it aside.
7.
Grind tomatoes ,coriander leaves with water to get fine puree.Keep it
aside.
8.
Heat kadhai and add oil in it. Add cumin seeds and mustard
,asafoetida in oil to make tempering.
9.
As mustard splutter add onion puree in it. Saute for 3 to 4 minutes.
10.
Pour tomato puree in kadhai and saute for 3 to 4 minutes. Keep on
stirring veggie puree untill oil separates from it.
11.
Add pureed green vegetables in kadhai and mix well.Let it cook for
3-4 minutes.
12.
Add cumin powder,turmeric,salt,coriander powder in it.
13.
Add fried paneer cubes in kadhai and mix all ingredients properly.
14.
Add enough water (As per required consistency) for cooking Methi
palak paneer curry .
15.
Cook Methi palak paneer curry for another 4-5 minutes.
16.
Switch off gas and garnish it with coriander leaves.
17.
Serve Methi palak paneer with roti / paratha / naan or rice.
